Thai Cucumber Salad
(or my low-cal version of it!)
NOTE: Some people love this; others can't
stand it. This is a very TANGY salad that goes nicely with spicy
foods. A large portion has only 67 calories. This is a lot
of food for very few calories, so it's good to use as a "filler."
Normally, one uses "Seasoned White Rice Vinegar" for this recipe, that
already has A LOT of sugar or corn syrup in it. Replacing the
normal vinegar for simple distilled vinegar and then sweetening it with
Splenda saves a huge amount of calories.
